It’s a Greena Colada!

Sadly we’re nearing the end of school holidays here once again, and already dreading the fact that I’m going to miss my little foodie friends once they return to school next week 🙁 All these holidays we’ve been having theme days, all of their choice.
We’ve had a peanut butter day, apple day, banana day, cheese day, taco day, green food day and even an ice cream day. Our days have included [mostly] healthy meals containing the themed food, and they’ve had a blast incorporating foods into all meals & snacks.
Needless to say, some days were amazing – banana day was my fave, and peanut butter day was the boys favourite –  while they learnt quickly that ice cream gets boring reaaaally quickly, and some meals have been disgusting to say the least, think taco smoothie time (Mr 8yo’s genius idea). Today is the grand finale of our fun food theme days and I think we’ve saved the best til last just quietly. It’s pineapple day!

“If you like Pina Coladas, and getting caught in the rain” is stuck in our heads now, and such an appropriate theme song for these winter school holidays! Here’s our genius creation of the morning, and this one is a keeper I promise!!

Greena Coladas
Makes 5 kid-sized serves

half a pineapple – roughly chopped,
3 handfuls/cups of spinach leaves (*trust me – you won’t taste it),
1 frozen banana,
1 cup of coconut water,
1 cup of coconut milk.

Pop all ingredients into a blender and blend until it’s all smooth. Enjoy!

This super smoothie is an excellent source of nutrients for those fussy kids who don’t eat enough varied fruit & veg in their daily diets. It’s high in vitamins A, K, C & E, and B1, B2, B3 & B6. It’s also packed full of manganese, bromelain, folate, magnesium, iron, copper, fibre, tryptophan, potassium and electrolytes. How’s that for a super tasty drink? Beats a juice box any day of the week!
